1.5 pounds boneless, skinless chicken thighs

1 tablespoon Cajun seasoning (adjust to taste)

1 tablespoon olive oil

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

8 oz fettuccine pasta (uncooked)

1 cup bell peppers, sliced (red, yellow, or green)

1/2 cup onion, sliced

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Chicken: Rub the Cajun seasoning over the chicken thighs, ensuring they are evenly coated.

    Sear the Chicken: In a skillet, heat the olive oil over medium-high heat. Add the chicken thighs and sear for about 3-4 minutes on each side until browned (they don’t need to be fully cooked). Remove from skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the minced garlic, sliced bell peppers, and onion. Sauté for about 2-3 minutes until they are slightly softened and fragrant.

        Prepare the Slow Cooker: Place the seared chicken thighs at the bottom of the slow cooker. Pour the sautéed vegetables on top.

          Add Liquids: In a bowl, combine chicken broth and heavy cream, then pour over the chicken and vegetables in the slow cooker.

            Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours.

              Pasta Time: About 30 minutes before serving, add the uncooked fettuccine pasta directly into the slow cooker, ensuring it is submerged in the liquid. Stir occasionally to prevent sticking.

                Finish with Cheese: Once the pasta is tender, stir in the grated Parmesan cheese until melted and creamy. Taste and season with salt and black pepper as needed.
