3-4 lbs corned beef brisket, with spice packet

4 cups beef broth

1 medium onion, quartered

4 cloves garlic, minced

6 whole cloves

1 teaspoon black peppercorns

4 medium carrots, peeled and cut into chunks

1 small head of green cabbage, cut into wedges

2 bay leaves

1 tablespoon apple cider vinegar

Fresh parsley, chopped for garnish (optional)

Instructions
 

Prepare the Slow Cooker: Place the quartered onion at the bottom of the slow cooker. This will help elevate the corned beef and allow for even cooking.

    Add Corned Beef: Rinse the corned beef brisket under cold water to remove excess salt. Place it on top of the onions in the slow cooker, fat-side up. Sprinkle the included spice packet, garlic, cloves, and peppercorns over the meat.

      Pour in Broth: Add the beef broth to the slow cooker along with the bay leaves and apple cider vinegar. The liquid should come up about halfway on the corned beef.

        Cook Low and Slow: Cover and cook on low for 8-10 hours, or until the corned beef is tender. The longer it cooks, the more flavorful it becomes!

          Add Vegetables: In the last 2 hours of cooking (about 6-8 hours in), add the carrots and cabbage wedges. Ensure the cabbage is submerged in the broth for optimal flavor.

            Serve: Once fully cooked, carefully remove the corned beef from the slow cooker and let it rest on a cutting board for 10 minutes before slicing against the grain into thin slices.

              Plate: Arrange slices of corned beef with carrots and cabbage on plates. Spoon some of the cooking liquid over the top for extra flavor. Garnish with fresh parsley if desired.
