Slow Cooker Cowboy Casserole

Ingredients
  

1 lb ground beef or turkey

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn kernels, drained

1 can (10 oz) diced tomatoes with green chilies

1 can (10 oz) condensed cream of mushroom soup

1 medium onion, chopped

2 cloves garlic, minced

2 cups frozen tater tots

1 tsp chili powder

1 tsp cumin

½ tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Instructions
 

In a skillet over medium heat, brown the ground beef or turkey until fully cooked, breaking it up into small pieces. Drain excess fat and transfer to the slow cooker.

    Add the chopped onion and minced garlic to the slow cooker with the meat.

      Stir in the black beans, corn, diced tomatoes with green chilies, and condensed cream of mushroom soup.

        Sprinkle in the chili powder, cumin, smoked paprika, salt, and pepper. Mix everything together until well combined.

          Gently place the frozen tater tots on top of the mixture in the slow cooker, no need to stir.

            Cover and cook on low for 6-8 hours or on high for 3-4 hours until the tater tots are cooked through and toppings are bubbly.

              About 15 minutes before serving, sprinkle shredded cheddar cheese on top and cover again until the cheese melts.

                Serve hot, garnished with fresh cilantro for a burst of flavor!
