Ingredients

1 pound pasta (penne or rotini)

1 can (15 oz) hatch green chilies, diced (mild or hot based on preference)

1 can (15 oz) crushed tomatoes

1 cup heavy cream

1 cup vegetable or chicken broth

1 onion, diced

4 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

2 cups shredded cheese (cheddar or a Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Slow Cooker: Start by lightly greasing the slow cooker insert with cooking spray or olive oil to prevent sticking.

Layer Ingredients: In the slow cooker, combine the diced onion, minced garlic, diced hatch green chilies, crushed tomatoes, vegetable or chicken broth, heavy cream, cumin, smoked paprika, chili powder, and salt and pepper. Stir well to combine.

Add Pasta: Add the uncooked pasta directly to the mixture. Stir to ensure the pasta is well coated and submerged in the sauce.

Cook: Cover the slow cooker and set it on low heat. Cook for about 3-4 hours, or until the pasta is tender and cooked through. Stir occasionally to prevent sticking.

Stir in Cheese: Once the pasta is cooked, add 1.5 cups of the shredded cheese to the slow cooker. Stir until the cheese is melted and creamy. If the mixture seems too thick, feel free to add a bit more broth or cream to achieve the desired consistency.

Serve: Spoon the creamy hatch chili pasta into bowls. Top with the remaining shredded cheese, fresh chopped cilantro, and serve with lime wedges on the side for an extra zing.

Enjoy: Each serving is hearty, creamy, and bursting with flavor, perfect for a cozy night in!
