2-3 lbs beef chuck roast

1 medium onion, sliced

4 cloves garlic, minced

4 cups beef broth

1 cup dry red wine (or additional beef broth)

3 tablespoons soy sauce

2 teaspoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4-6 hoagie rolls or French bread

8 slices provolone cheese (optional)

Fresh parsley for garnish (optional)

Prepare the Roast: Season the beef chuck roast generously with salt and pepper on all sides. Heat a skillet over medium-high heat and sear the roast for about 4-5 minutes on each side until browned. This step adds depth of flavor.

    Arrange Ingredients in Slow Cooker: In the bottom of your slow cooker, layer the sliced onions and minced garlic. Place the seared roast on top of the onions and garlic.

      Create the Broth Mixture: In a separate bowl, whisk together the beef broth, red wine (if using), soy sauce, Worcestershire sauce, thyme, and rosemary. Pour this mixture over the roast in the slow cooker.

        Cook: Cover and cook on low for 8-10 hours, or on high for 4-6 hours, until the meat is tender and easily shreds with a fork.

          Shred the Meat: Once cooked, remove the roast from the slow cooker and let it rest for a few minutes. Using two forks, shred the meat into bite-sized pieces.

            Strain the Broth: If desired, strain the cooking liquid to remove the onion and garlic bits, keeping the flavorful broth for dipping. Transfer it to a serving bowl or small cups.

              Prepare the Sandwiches: For each sandwich, place a generous portion of the shredded meat onto a hoagie roll. If using cheese, place 1-2 slices on top and toast under a broiler for a couple of minutes until melted and bubbly.

                Serve: Serve the sandwiches with a side of the strained broth for dipping. Garnish with fresh parsley if desired.
