Ingredients

4 bone-in pork chops (about 1-inch thick)

2 large yellow onions, thinly sliced

4 cloves garlic, minced

1 cup beef broth

1 cup French onion soup (canned or homemade)

1 teaspoon dried thyme

1 teaspoon Worcestershire sauce

Salt and pepper, to taste

1 tablespoon olive oil

1 cup shredded Gruyère cheese (or Swiss cheese)

Fresh parsley, chopped (for garnish)

Instructions

Sear the Pork Chops:

    - In a large skillet over medium-high heat, add olive oil. Once hot, season pork chops with salt and pepper. Sear the chops for about 3-4 minutes on each side until they develop a nice golden-brown crust. Remove and set aside.

      Sauté the Onions:

        - In the same skillet, add the sliced onions and cook for about 10-12 minutes, stirring occasionally, until they are caramelized and golden brown. Add minced garlic and sauté for an additional minute until fragrant. Remove from heat.

          Prepare the Slow Cooker:

            - In your slow cooker, combine beef broth, French onion soup, thyme, and Worcestershire sauce. Stir to mix well.

              Layer the Ingredients:

                - Place the seared pork chops in the slow cooker. Top with the caramelized onions and garlic mixture. Make sure the onions are evenly distributed over the pork.

                  Cook the Pork Chops:

                    - Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the pork is tender and fully cooked.

                      Add Cheese:

                        - In the last 30 minutes of cooking, sprinkle the shredded Gruyère cheese on top of the pork chops. Re-cover and let the cheese melt.

                          Serve:

                            - Once cooked, ladle the pork chops and onions onto plates. Garnish with freshly chopped parsley and an extra drizzle of the slow-cooked sauce.

                              Enjoy:

                                - Serve with creamy mashed potatoes or crusty bread to soak up the delicious sauce!
