Ingredients

1 lb ground turkey (or beef, if preferred)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh, frozen, or canned)

1 cup pineapple chunks (fresh or canned, drained)

1 medium red bell pepper, diced

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon cinnamon

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust for spice preference)

1 cup tomato sauce

2 tablespoons brown sugar (or honey)

1/2 cup shredded cheese (cheddar or mozzarella, for topping)

Sliced fruit for garnish (strawberries, kiwi, or bananas)

Fresh cilantro or parsley for garnish

Instructions

Prepare Ingredients: In a large skillet over medium heat, brown the ground turkey until it is fully cooked, about 5-7 minutes. Drain any excess fat if necessary.

Transfer to Slow Cooker: Add the browned turkey to the slow cooker. Then, add the black beans, kidney beans, diced tomatoes with green chilies, corn, pineapple, red bell pepper, onion, and garlic.

Spices and Sauce: In a bowl, mix the chili powder, cumin, smoked paprika, cinnamon, salt, black pepper, cayenne pepper, tomato sauce, and brown sugar. Stir this mixture into the slow cooker, ensuring all ingredients are evenly combined.

Cook: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours. Allow the flavors to meld and the chili to heat through.

Prep for Serving: When ready to serve, give the chili a good stir and check the seasoning—adjust with more salt or spices as needed. If you like your chili thicker, you can let it cook uncovered for the last 30 minutes.

Serve and Garnish: Spoon the chili into bowls and top with shredded cheese. Garnish with sliced fresh fruit and chopped cilantro or parsley for a vibrant finish.

Enjoy: Serve with your favorite cornbread or tortilla chips for a deliciously unique meal!
