3-4 lbs pork shoulder roast

1 tablespoon olive oil

4 cloves garlic, minced

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 teaspoon paprika

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

1 cup low-sodium chicken broth

1 tablespoon apple cider vinegar

1 large onion, quartered

4 medium carrots, cut into chunks

4 medium potatoes, halved

Fresh parsley, chopped (for garnish)

Prepare the Pork: Start by patting the pork shoulder roast dry with paper towels. This helps achieve a nice sear.
