Slow Cooker Hatch Chili Beef Stew

2 pounds beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

2 cups Hatch green chiles, roasted, peeled, and chopped (fresh if available, or canned if not)

3 medium potatoes, diced

3 carrots, sliced

1 bell pepper (red or yellow), diced

2 cups beef broth

1 can (14.5 oz) diced tomatoes, undrained

1 tablespoon ground cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Sear the Beef: In a large skillet, heat olive oil over medium-high heat. Add the cubed beef and season with salt and pepper. Sear the beef for 3-5 minutes until browned on all sides. Transfer to the slow cooker.

    Sauté Aromatics: In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant. Scrape up any browned bits from the pan and transfer the mixture to the slow cooker.

      Combine Ingredients: In the slow cooker, add the roasted and chopped Hatch green chiles, diced potatoes, sliced carrots, diced bell pepper, beef broth, diced tomatoes, ground cumin, chili powder, smoked paprika, and dried oregano. Stir well to combine all ingredients.

        Slow Cook: Cover the slow cooker and set it to low heat for 6-8 hours or high heat for 4-5 hours, or until the beef is tender and the flavors have melded together beautifully.

          Final Adjustments: Once cooked, taste and adjust seasoning with additional salt and pepper if needed.
