Slow Cooker Honey Chicken

2 lbs boneless, skinless chicken thighs

1/2 cup honey

1/4 cup soy sauce (low sodium)

2 tablespoons apple cider vinegar

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup bell peppers, sliced (any color)

1 onion, sliced

1/4 cup green onions, chopped (for garnish)

1 tablespoon sesame seeds (optional, for garnish)

Instructions
 

Prepare the Chicken: In a large bowl, combine honey, soy sauce, apple cider vinegar, minced garlic, grated ginger, sesame oil, black pepper, and salt. Whisk until well mixed.

    Add Chicken to Slow Cooker: Place the chicken thighs into the slow cooker, making sure they are evenly distributed.

      Pour Sauce Over Chicken: Pour the prepared honey sauce over the chicken, ensuring each piece is well coated.

        Add Vegetables: Top the chicken with sliced bell peppers and onions, distributing evenly.

          Cook: Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through.

            Thicken Sauce (Optional): If you prefer a thicker sauce, remove the chicken once cooked and transfer the sauce to a saucepan. Simmer on medium heat for about 10-15 minutes until reduced to your desired consistency. Return the chicken back to the slow cooker or serve with the thickened sauce.
