2 lbs beef chuck roast, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

3 cups low-sodium beef broth

1/2 cup honey

1/4 cup soy sauce

2 tablespoons Worcestershire sauce

1 tablespoon tomato paste

4 medium carrots, sliced into rounds

3 medium potatoes, diced

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet over medium-high heat, add olive oil. Once hot, add the beef cubes and sear them on all sides until browned (about 5-7 minutes). Transfer the browned beef to the slow cooker.

    Sauté the Onions and Garlic: In the same skillet, add diced onion and sauté for 3-4 minutes until translucent. Stir in minced garlic and cook for an additional 1 minute. Pour this mixture over the beef in the slow cooker.

      Prepare the Sauce: In a mixing bowl, combine beef broth, honey, soy sauce, Worcestershire sauce, and tomato paste. Stir well until combined, then pour the mixture over the beef and onions in the slow cooker.

        Add Vegetables: Layer the sliced carrots and diced potatoes over the beef. Sprinkle with dried thyme, dried rosemary, salt, and pepper. Gently mix everything together to ensure the ingredients are well-distributed.

          Cook the Stew: Set the slow cooker to low and cook for 7-8 hours, or on high for 4-5 hours, until the beef is tender and the flavors have melded.

            Finish with Peas: About 30 minutes before serving, stir in the frozen peas, and cover to allow them to warm through.
