4 bone-in pork chops (about 1 inch thick)

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional for a bit of heat)

2 tablespoons olive oil

1 medium onion, sliced

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the pork chops: Pat the pork chops dry with paper towels to ensure a good sear. Season both sides with salt, pepper, garlic powder, onion powder, and cayenne pepper (if using).

    Sear the chops: In a skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 3-4 minutes on each side until they develop a golden-brown crust. Remove from heat and set aside.

      Mix the sauce: In a medium bowl, whisk together the honey, Dijon mustard, apple cider vinegar, and soy sauce until well combined.

        Layer the slow cooker: Place the sliced onion at the bottom of the slow cooker. Lay the seared pork chops on top of the onions. Pour the honey mustard mixture over the pork chops, ensuring they are well coated.

          Cook: Cover the slow cooker and cook on low for 6-8 hours, or on high for 4-5 hours, until the pork chops are tender and cooked through.
