Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 cup (1 stick) unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

3/4 cup buttermilk

1 tablespoon fresh chives, chopped (optional for garnish)

Instructions

Preheat your Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper and set it aside.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, smoked paprika, garlic powder, and black pepper until well combined.

Cut in the Butter: Add the cubed cold butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs with some small pea-sized pieces of butter still visible.

Incorporate the Cheese: Stir in the shredded sharp cheddar cheese, ensuring it's evenly distributed throughout the flour mixture.

Add Buttermilk: Make a well in the center of the mixture, and pour in the buttermilk. Using a fork, gently mix until just combined. Avoid overmixing; the dough should be slightly sticky.

Form the Biscuits: Turn the dough out onto a floured surface. With floured hands, gently pat the dough into a rectangle about 1-inch thick. Fold the dough over onto itself in thirds (like a letter) and pat it down again to 1-inch thickness to create layers.

Cut the Biscuits: Using a floured biscuit cutter, cut out rounds from the dough. Place the biscuits on the prepared baking sheet, making sure they touch slightly (this helps them rise).

Bake the Biscuits: Bake for 12-15 minutes, or until the tops are golden brown and the biscuits have risen beautifully.

Cool and Serve: Let the biscuits cool for a few minutes on the baking sheet before transferring to a wire rack. Serve warm, optionally garnished with chopped chives.

Enjoy: These smoky, cheesy biscuits are perfect as a side for breakfast, brunch, or a delightful accompaniment to soups and stews!
