1 medium onion, diced

3 cloves garlic, minced

2 medium-sized carrots, diced

2 celery stalks, diced

1 bell pepper (red or green), diced

3 cups cooked black beans (or 2 cans, rinsed and drained)

1 can (14.5 oz) diced tomatoes with green chilies

2 tablespoons tomato paste

1 teaspoon ground cumin

1 tablespoon smoked paprika

1-2 chipotle peppers in adobo sauce, minced (adjust for heat)

1 teaspoon adobo sauce from the chipotle can

4 cups vegetable broth

1 teaspoon salt (to taste)

1/2 teaspoon black pepper (to taste)

1 tablespoon lime juice (freshly squeezed)

Fresh cilantro, for garnish

Avocado slices, for serving

Sour cream or Greek yogurt (optional), for serving

Crushed tortilla chips (optional), for serving

Instructions
 

Sauté the Base: In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onions and cook until they become translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Veggies: Incorporate the diced carrots, celery, and bell pepper. Sauté for about 5-7 minutes until the vegetables are tender, stirring occasionally.

      Mix in Spices: Sprinkle in the ground cumin, smoked paprika, minced chipotle peppers, and adobo sauce. Stir well to coat the vegetables and toast the spices for about a minute.

        Combine Main Ingredients: Add in the black beans, diced tomatoes (with their juices), tomato paste, vegetable broth, salt, and black pepper. Bring the mixture to a boil.
