2 tbsp olive oil

1 medium onion, diced

4 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 bell pepper (red or yellow), diced

2 jalapeño peppers, finely chopped (seeds removed for less heat)

1 can (28 oz) crushed tomatoes

2 cans (15 oz each) black beans, rinsed and drained

1 cup vegetable broth

2 tbsp chipotle in adobo sauce, chopped (adjust to taste)

2 tsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

1/2 tsp salt (more to taste)

1/4 tsp black pepper

1 tbsp lime juice (freshly squeezed)

Fresh cilantro, chopped (for garnish)

Avocado slices (for topping, optional)

Shredded cheese (for topping, optional)

Instructions
 

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened and translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add the Harder Vegetables: Toss in the diced carrots, celery, and bell pepper. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened.

      Spice it Up: Add the chopped jalapeños, chipotle in adobo sauce, ground cumin, smoked paprika, oregano, salt, and black pepper to the pot. Stir well to combine the spices with the vegetables.

        Incorporate the Tomatoes and Beans: Pour in the crushed tomatoes, black beans, and vegetable broth. Stir everything together, ensuring the beans are well mixed with the veggies and spices.

          Simmer the Chili: Bring the chili to a gentle boil, then reduce the heat to low. Cover and simmer for at least 30 minutes. This allows the flavors to meld beautifully. If you have time, let it simmer for up to an hour for an even richer taste.

            Finish with Lime: After simmering, stir in the lime juice and taste the chili, adjusting salt and spice levels as necessary.
