Smoky Chipotle Mac & Cheese – A Fiery Comfort Food!

8 oz elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon smoked paprika

1-2 teaspoons chipotle powder (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 cups sharp cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

½ cup cream cheese, softened

¼ cup freshly chopped cilantro (for garnish)

1 cup panko breadcrumbs

2 tablespoons olive oil

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot over medium heat, melt the butter. Once melted, whisk in the flour to create a roux, cooking for about 2-3 minutes until slightly golden.

      Add Milk and Spices: Slowly pour in the whole milk while continuously whisking to prevent lumps. Combing in the smoked paprika, chipotle powder, garlic powder, and onion powder. Continue whisking until the mixture thickens, about 5-7 minutes.

        Stir in the Cheese: Lower the heat and add the shredded cheddar and Monterey Jack cheeses, along with the cream cheese. Stir constantly until all the cheese melts and the sauce is smooth. Season with salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, stirring until the pasta is fully coated.

            Prepare for Baking: Preheat your oven to 350°F (175°C). In a small bowl, combine the panko breadcrumbs with olive oil, mixing until well coated.

              Assemble the Mac & Cheese: Transfer the mac and cheese into a greased 9x13 inch baking dish. Evenly sprinkle the breadcrumb mixture on top.
