Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1-2 teaspoons chipotle powder (adjust to taste)

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

8 small corn tortillas

1 cup red cabbage, finely shredded

½ cup fresh cilantro, chopped

½ cup crumbled feta cheese (optional)

1 avocado, sliced

Lime wedges, for serving

Instructions

Marinate the Shrimp: In a bowl, combine olive oil, minced garlic, smoked paprika, chipotle powder, ground cumin, salt, black pepper, and lime juice. Add the shrimp to the bowl, making sure they're well-coated. Cover and let marinate in the refrigerator for 15-30 minutes.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp. Cook for about 2-3 minutes per side, or until the shrimp are pink and opaque. Remove from heat and set aside.

Warm the Tortillas: In a separate pan or on the grill, warm the corn tortillas for about 30 seconds on each side until pliable.

Assemble the Tacos: Take one warmed tortilla and add a portion of smoky chipotle shrimp. Top with a generous amount of shredded red cabbage, fresh cilantro, avocado slices, and crumbled feta cheese if using.

Serve: Squeeze additional lime juice over the top for extra flavor. Serve the tacos with lime wedges on the side.
