8 oz elbow macaroni

2 cups shredded smoked Gouda cheese

1 cup sharp cheddar cheese, shredded

4 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon mustard powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup breadcrumbs (panko preferred for extra crunch)

1/4 teaspoon cayenne pepper (optional)

Cooking spray or olive oil, for greasing the baking tray

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes to form a roux. Gradually whisk in the whole milk, ensuring there are no lumps. Continue to cook until the mixture thickens, about 4-5 minutes.

      Add the Cheese: Lower the heat and stir in the smoked Gouda and cheddar cheese, mixing until melted and smooth. Add the garlic powder, mustard powder, smoked paprika, salt, and pepper. Taste and adjust seasoning as needed.

        Combine Macaroni and Cheese Sauce: Add the cooked macaroni to the cheese sauce, stirring well to ensure every piece is coated. If desired, fold in cayenne pepper for an extra kick. Let the mixture cool slightly.
