S’mores Stuffed Chocolate Chip Cookies – The Ultimate Treat!

Ingredients
  

1 cup unsalted butter, softened

3/4 cup brown sugar, packed

3/4 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1 cup mini marshmallows

1 cup graham cracker crumbs

1 bar of chocolate (milk or dark, broken into squares)

Instructions
 

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy. This should take about 2-3 minutes.

      Add in the eggs and vanilla extract, mixing until well incorporated.

        In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the butter mixture, mixing on low speed until just combined.

          Fold in the chocolate chips and 1/2 cup of the mini marshmallows.

            To assemble the cookies, scoop about 1 tablespoon of cookie dough and flatten it slightly in your hands. Place a square of chocolate and about 2-3 additional marshmallows on top.

              Take another tablespoon of dough and cover the filling completely, sealing the edges around the marshmallows and chocolate. Repeat with the remaining dough.

                Roll the cookie dough balls in the graham cracker crumbs to coat the outside.

                  Place the stuffed cookies on the prepared baking sheets, spacing them about 2 inches apart.

                    Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden but the centers are still slightly soft.

                      Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely. This will allow the marshmallows to settle and become gooey.
