Ingredients
  

4 large russet potatoes, peeled and diced

3 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 cup shredded cheddar cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 5-7 minutes until just tender. Drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for 3-4 minutes to reduce slightly.

          Lower the heat and gradually stir in the heavy cream. Add the dried thyme and smoked paprika. Season with salt and pepper to taste.

            Once the sauce is well-mixed, add the par-cooked potatoes to the skillet. Gently stir to coat the potatoes in the sauce.

              Sprinkle the shredded cheddar cheese over the potatoes, cover the skillet, and let it cook for about 10 minutes on low heat, allowing the cheese to melt and the flavors to meld.

                Once the cheese is melted and bubbly, remove from heat. Garnish with fresh chopped parsley before serving.
