For the Crust:

2 ½ cups all-purpose flour

1 tsp baking powder

½ tsp salt

1 cup unsalted butter, chilled and cubed

1/4 cup granulated sugar

1/4 cup brown sugar

1 egg, beaten

1 tsp vanilla extract

For the Filling:

4 cups Granny Smith apples, peeled, cored, and sliced

1 cup cream cheese, softened

1/2 cup granulated sugar

1/2 tsp cinnamon

1/4 tsp nutmeg

1 tsp vanilla extract

1 tbsp lemon juice

For the Snickerdoodle Topping:

1/2 cup granulated sugar

2 tsp ground cinnamon

1/4 cup butter, melted

1 cup all-purpose flour

1/4 tsp baking soda

1/4 tsp cream of tartar

1/2 cup brown sugar

Instructions
 

Make the Crust:

    - In a large mixing bowl, combine the flour, baking powder, and salt.

      - Using a pastry cutter or your fingers, mix in the chilled butter until the mixture resembles coarse crumbs.

        - Stir in the granulated sugar, brown sugar, beaten egg, and vanilla extract until the dough comes together.

          - Divide the dough in half, flatten into disks, wrap in plastic and refrigerate for at least 1 hour.

            Prepare the Apple Filling:

              - In a large bowl, mix the sliced apples with lemon juice, sugar, cinnamon, nutmeg, and vanilla extract. Toss to coat the apples evenly. Set aside.

                Prepare the Cream Cheese Layer:

                  - In a mixing bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy.

                    Preheat the Oven:

                      - Preheat your oven to 375°F (190°C).

                        Roll out the Crust:

                          - On a floured surface, roll out one of the chilled dough disks to fit a 9-inch pie pan. Place the crust into the pan and gently press it into the edges.

                            Layer the Cream Cheese:

                              - Spread the cream cheese mixture evenly over the bottom of the crust.

                                Add the Apple Filling:

                                  - Layer the apple mixture on top of the cream cheese layer, distributing the apples evenly.

                                    Make the Snickerdoodle Topping:

                                      - In a separate bowl, mix together the granulated sugar, cinnamon, melted butter, flour, baking soda, cream of tartar, and brown sugar until crumbly. Sprinkle this mixture generously over the apple filling.

                                        Bake:

                                          - Place the pie in the preheated oven and bake for 45-50 minutes, or until the apples are tender and the topping is golden brown.

                                            Cool & Serve:

                                              - Allow the pie to cool for at least 30 minutes before slicing. Serve warm or at room temperature, perhaps with a scoop of vanilla ice cream.
