Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

For the Cinnamon Sugar Coating:

1/2 cup granulated sugar

2 teaspoons ground cinnamon

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream Butter and Sugar: In a large mixing bowl, cream together the softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 3-4 minutes.

Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and 1 teaspoon of ground cinnamon.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

Chill Dough: Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes. This helps the cookies to maintain their shape while baking.

Prepare Cinnamon Sugar: In a small bowl, mix together 1/2 cup of granulated sugar with 2 teaspoons of ground cinnamon. Set aside.

Form Cookies: Once the dough is chilled, scoop out tablespoon-sized portions and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

Coat in Cinnamon Sugar: Gently roll each dough ball in the cinnamon sugar mixture until fully coated.

Bake Cookies: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden, but the centers remain soft.

Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your soft and chewy churro cookies fresh!
