Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1/4 cup unsulfured molasses

2 teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

1 tablespoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

1/2 teaspoon freshly grated nutmeg (optional)

1/2 cup granulated sugar (for rolling)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easier cleanup.

Cream Butter and Sugars: In a large mixing bowl, use a hand mixer or stand mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

Add Wet Ingredients: Beat in the egg, molasses, and vanilla extract, mixing until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, ground cinnamon, ground ginger, ground cloves, salt, and nutmeg.

Mix Wet and Dry: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix, as this can make the cookies tough.

Chill the Dough (Optional): For thicker cookies, chill the dough in the refrigerator for about 30 minutes.

Shape and Roll: Scoop out tablespoon-sized portions of dough and roll them into balls. Roll each ball in granulated sugar to coat.

Bake: Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops look slightly cracked.

Cool: Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: These cookies are best enjoyed warm, with their soft and chewy texture, but can also be stored in an airtight container for up to one week.
