Ingredients

1 medium head of green cabbage, chopped

1 pound smoked sausage (kielbasa or andouille), sliced

1 large onion, diced

3 cloves garlic, minced

4 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

2 green onions, sliced (for garnish)

Optional: 2 tablespoons apple cider vinegar for extra tang

Instructions

Prep the Vegetables: Rinse and chop the cabbage into bite-sized pieces. Dice the onion and mince the garlic.

Cook the Sausage: In a large skillet or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the sliced sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Sauté Onions and Garlic: In the same skillet, melt the butter over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Add the Cabbage: Gradually add the chopped cabbage to the skillet. Stir well to combine with the onion and garlic. Cook for about 5-8 minutes, stirring occasionally until the cabbage starts to wilt.

Season: Sprinkle in the smoked paprika, red pepper flakes, salt, and black pepper. If using, drizzle in the apple cider vinegar for a hint of tanginess. Stir everything together.

Combine and Finish Cooking: Add the browned sausage back into the skillet. Continue to cook for another 5-10 minutes, stirring occasionally, until the cabbage is tender and everything is well incorporated.

Garnish and Serve: Remove from heat and garnish with sliced green onions. Serve hot as a tasty side dish or a hearty main course.
