Ingredients

8 oz elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 cup whole milk

1 cup heavy cream

1/2 cup unsalted butter (1 stick)

1/2 cup all-purpose flour

1/2 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp black pepper

1/2 tsp salt

1/4 tsp ground mustard

1/4 tsp cayenne pepper (optional, for a little kick)

1/2 cup breadcrumbs (for topping)

2 tbsp fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, add the flour, whisking constantly to form a smooth roux for about 2-3 minutes.

Add Liquids: Gradually whisk in the whole milk and heavy cream, continuing to stir until the mixture thickens, about 4-5 minutes. Reduce heat to low.

Incorporate Cheeses: Stir in the sharp cheddar and Gruyère cheese until completely melted and smooth. Add smoked paprika, garlic powder, onion powder, black pepper, salt, ground mustard, and cayenne pepper. Mix well to combine.

Combine Pasta and Sauce: Add the drained macaroni to the cheese sauce, stirring gently to ensure the pasta is evenly coated.

Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture into a greased 9x13 inch baking dish.

Add Topping: In a small bowl, mix breadcrumbs with a tablespoon of melted butter for extra richness. Sprinkle the breadcrumb mixture evenly over the top of the macaroni and cheese.

Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.

Garnish and Serve: Remove from the oven, let it cool slightly, and garnish with chopped fresh parsley before serving. Enjoy your creamy Southern-style macaroni and cheese!
