Ingredients

4 bone-in pork chops (about 1 inch thick)

Salt and black pepper, to taste

1 cup all-purpose flour (for dredging)

3 tablespoons vegetable oil (for frying)

1 medium onion, thinly sliced

2 cloves garlic, minced

2 cups low-sodium chicken broth

1 cup heavy cream

1 teaspoon Worcestershire sauce

1 teaspoon hot sauce (optional, to taste)

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Prepare the Pork Chops: Season both sides of the pork chops generously with salt and black pepper. Dredge each chop in flour, shaking off any excess.

Brown the Chops: In a large skillet over medium-high heat, heat the vegetable oil. Once hot, add the pork chops and cook for about 4-5 minutes on each side until they have a golden-brown crust. Remove the chops from the skillet and set aside on a plate.

Sauté Onions and Garlic: In the same skillet, add the sliced onions and sauté for about 5 minutes until they become translucent. Add the minced garlic and sauté for an additional minute until fragrant.

Create the Gravy: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream, Worcestershire sauce, hot sauce (if using), thyme, and smoked paprika. Bring the mixture to a gentle simmer.

Smother the Chops: Return the pork chops to the skillet, nestling them into the gravy. Cover the skillet and reduce the heat to low. Allow to simmer for 30-35 minutes, or until the pork chops are fully cooked and tender.

Serve: Once the pork chops are done, remove the skillet from heat. Garnish with fresh parsley before serving. Spoon the rich gravy over the chops and enjoy with sides like creamy mashed potatoes or cornbread.
