1 lb boneless, skinless chicken breasts

2 tsp chili powder

1 tsp cumin

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

1 tbsp olive oil

Juice of 1 lime

For the Salad Base:

6 cups mixed greens (romaine, spinach, and arugula work well)

1 cup cherry tomatoes, halved

1 cup corn (canned, frozen, or grilled)

1 avocado, diced

1 cup black beans, rinsed and drained

1/2 red onion, thinly sliced

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

For the Dressing:

1/4 cup Greek yogurt (or sour cream)

2 tbsp mayonnaise

2 tbsp lime juice

1 tsp chipotle powder (or your favorite hot sauce)

1 tbsp honey (or agave syrup)

Instructions
 

Prepare the Chicken:
