Packed with tender chicken, earthy sweet potatoes, and nutritious black beans, this dish is as healthy as it is delicious. 2 medium sweet potatoes, peeled and diced into ½ inch cubes

1 lb boneless, skinless chicken breasts, diced

1 red bell pepper, diced

1 yellow onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 tsp chili powder

1 tsp cumin

½ tsp smoked paprika

½ tsp cayenne pepper (adjust for spice preference)

Salt and black pepper, to taste

2 tbsp olive oil

4 green onions, sliced (for garnish)

¼ cup cilantro, chopped (for garnish)

4 eggs (optional, for topping)

Avocado slices (optional, for serving)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10–12 minutes, stirring occasionally until they are tender and slightly browned. Remove the sweet potatoes from the skillet and set aside.

    Cook the Chicken: In the same skillet, add another tablespoon of olive oil if needed. Add the diced chicken and season with chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook for around 5–7 minutes, or until the chicken is cooked through and no longer pink.

      Add Vegetables and Beans: Once the chicken is cooked, add the diced onion, bell pepper, and minced garlic to the skillet. Sauté for another 3–4 minutes until the vegetables are softened.

        Combine Ingredients: Return the cooked sweet potatoes to the skillet with the chicken and vegetables. Add the black beans and stir to combine all the ingredients. Cook everything together for an additional 2–3 minutes to heat through and allow the flavors to meld.

          Optional Egg Topping: If you want to add eggs, fry them in a separate pan to your desired doneness. Sunny-side-up or poached eggs work great for this dish.

            Serve: Once the hash is ready, scoop portions onto plates. Top with fried eggs if using, and sprinkle fresh green onions and cilantro on top. Serve with avocado slices on the side for an extra creamy touch.
