12 oz spaghetti

2 cups fresh spinach, chopped

1 cup sun-dried tomatoes, packed in oil, drained and chopped

1 cup heavy cream

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil leaves for garnish

Cook the Spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Spinach: In a large skillet over medium heat, add the olive oil. Once hot, add minced garlic and sauté for about 30 seconds until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes. Cook for another 2 minutes, allowing the flavors to meld together.

        Prepare the Cream Sauce: Lower the heat and pour in the heavy cream. Stir continuously for 2-3 minutes until the sauce starts to slightly thicken. Mix in the grated Parmesan cheese, stirring until melted and smooth. If the sauce is too thick, gradually add some reserved pasta water to reach your desired consistency.

          Combine: Add the cooked spaghetti to the sauce, tossing gently to coat the pasta evenly. If using, stir in red pepper flakes for a bit of heat. Season with salt and black pepper to taste.
