Spiced Apple Cider Donut Muffins

1 cup apple cider

1/2 cup unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon salt

1/4 cup brown sugar, for topping

1/4 cup granulated sugar, for topping

1 tablespoon ground cinnamon, for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease or line a muffin tin with cupcake liners.

    Simmer Cider: In a small saucepan over medium heat, bring the apple cider to a boil. Reduce the heat and let it simmer until reduced to about 1/2 cup, approximately 10 minutes. Let it cool slightly.

      Mix Wet Ingredients: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until combined. Add the eggs, vanilla extract, and the reduced apple cider. Mix until smooth.

        Combine Dry Ingredients: In another bowl, sift together the flour, baking powder, baking soda, ground cinnamon, nutmeg, cloves, and salt.

          Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
