Spiced Pumpkin & Lentil Soup

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon smoked paprika

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

4 cups pumpkin puree (fresh or canned)

1 cup red lentils, rinsed

4 cups vegetable broth

1 can (14 oz) coconut milk

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and ginger, cooking for an additional 2 minutes until fragrant.

      Add the ground cumin, coriander, smoked paprika, cinnamon, and nutmeg. Stir for about 1 minute to toast the spices and release their flavors.

        Add the pumpkin puree and lentils to the pot, stirring to combine thoroughly with the onion and spices.

          Pour in the vegetable broth, bring the mixture to a boil, then reduce to a simmer. Cover and allow it to cook for 20-25 minutes, or until the lentils are tender.

            Stir in the coconut milk and season with salt and pepper to taste. Let it simmer for an additional 5 minutes to allow the flavors to meld together.

              Remove the pot from heat and use an immersion blender to puree the soup until smooth, or you can blend in batches in a regular blender for a smoother texture.

                Serve hot, garnished with fresh cilantro and lime wedges on the side for squeezing over the soup.
