12 oz (340 g) spaghetti or your favorite pasta

2 ripe avocados, pitted and scooped

2 cloves garlic, minced

1 small red chili (or 1 tsp red chili flakes) for heat

Juice of 1 lime

1/4 cup fresh basil leaves, plus extra for garnish

Salt and pepper to taste

1/4 cup olive oil

1/4 cup grated Parmesan cheese (optional)

1/2 cup cherry tomatoes, halved (for garnish)

1/4 tsp smoked paprika (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to the package instructions until al dente. Drain and reserve about 1 cup of pasta water.

    Prepare the Avocado Mixture: In a food processor or a large mixing bowl, combine the avocados, minced garlic, chili (or chili flakes), lime juice, fresh basil, salt, pepper, and smoked paprika, if using. Blend or mash until smooth and creamy.

      Combine Pasta and Sauce: In the same pot that you cooked the pasta, add the avocado mixture and olive oil. Toss to combine, adding reserved pasta water gradually until you reach the desired creamy consistency.
