1 medium head of cauliflower, cut into bite-sized florets

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1/2 cup buffalo sauce (store-bought or homemade)

8 small corn tortillas

1 cup fresh shredded lettuce

1 cup cherry tomatoes, halved

1 avocado, sliced

1/2 cup crumbled blue cheese or feta (optional)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large bowl, combine the cauliflower florets with olive oil, garlic powder, smoked paprika, cayenne pepper, salt, and pepper. Toss well to ensure all florets are evenly coated.

      Roast the Cauliflower: Spread the seasoned cauliflower out on the prepared baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the cauliflower is tender and begins to brown.
