Ingredients

1 pound white fish fillets (such as tilapia or cod)

2 tablespoons Cajun seasoning

1 tablespoon olive oil

8 small corn or flour tortillas

1 cup shredded cabbage (green or purple)

1 ripe avocado, sliced

1/2 cup cherry tomatoes, halved

1 lime, cut into wedges

Fresh cilantro, for garnish

Zesty Lime Sauce:

1/2 cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon lime juice

1 teaspoon garlic powder

Salt and pepper, to taste

Instructions

Prepare the Fish: Pat the fish fillets dry with paper towels. In a small bowl, combine the Cajun seasoning and olive oil. Rub this mixture all over the fish fillets, ensuring they are well coated.

Make the Zesty Lime Sauce: In a medium bowl, whisk together the Greek yogurt, mayonnaise, lime juice, garlic powder, and a pinch of salt and pepper. Adjust seasoning to taste and set aside.

Cook the Fish: Heat a non-stick skillet or grill pan over medium-high heat. Once hot, add the seasoned fish fillets. Cook for about 3-4 minutes on each side, or until the fish is opaque and flaky. Remove from heat and let rest for a minute before flaking into bite-sized pieces.

Warm the Tortillas: While the fish is cooking, warm the tortillas in a dry skillet for about 30 seconds on each side, or until soft and pliable.

Assemble the Tacos: On each tortilla, layer a generous portion of shredded cabbage, followed by the flaked fish, sliced avocado, and halved cherry tomatoes.

Add the Sauce: Drizzle the zesty lime sauce over the assembled tacos. Finish with a sprinkle of fresh cilantro and a squeeze of lime juice from the wedges.

Serve: Enjoy these spicy Cajun fish tacos immediately while warm, with extra lime wedges on the side for a fresh kick!
