Ingredients

For the Cajun Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons Cajun seasoning

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1 tablespoon fresh lemon juice

For the Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1/2 cup carrots, grated

1/4 cup fresh cilantro, chopped

2 tablespoons fresh lime juice

1 tablespoon honey

Salt and pepper, to taste

For Assembly:

8 small corn or flour tortillas

1 avocado, sliced

Lime wedges, for serving

Extra cilantro, for garnish

Instructions

Prepare the Shrimp: In a large bowl, combine the shrimp, olive oil, Cajun seasoning, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper. Toss until the shrimp are evenly coated. Add the lemon juice, mix well, and let marinate for 15-20 minutes.

Make the Slaw: In a separate bowl, combine the green cabbage, red cabbage, carrots, and cilantro. In a small bowl, whisk together the lime juice, honey, salt, and pepper. Pour over the cabbage mixture and toss to combine. Set aside to let the flavors meld.

Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes per side or until they are opaque and cooked through. Remove from heat.

Warm the Tortillas: In a dry skillet, warm the tortillas over medium heat for about 30 seconds on each side, or until they are pliable.

Assemble the Tacos: Place a few shrimp in each tortilla, top with slaw, and add avocado slices. Garnish with extra cilantro if desired.

Serve: Serve the tacos with lime wedges on the side for squeezing over the top. Enjoy your spicy Cajun shrimp tacos!
