8 oz (225 g) penne pasta

1 lb (450 g) chicken breast, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon smoked paprika

1 cup heavy cream

1/2 cup chicken broth

1/2 cup sun-dried tomatoes, chopped (oil-packed preferred)

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh basil leaves for garnish

Optional: extra red pepper flakes for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta cooking water.

    Sauté the Chicken: In a large skillet over medium-high heat, add olive oil. Once heated, add the chicken pieces and season with salt, black pepper, smoked paprika, and half of the red pepper flakes. Cook for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the chopped onion and cook for about 3-4 minutes until softened. Add the minced garlic and remaining red pepper flakes, stirring for an additional 1 minute until fragrant.

        Combine Ingredients: Pour in the heavy cream and chicken broth, bringing the mixture to a gentle simmer. Stir in the sun-dried tomatoes and mix well. Let the sauce simmer for about 3-4 minutes to thicken slightly.

          Bring It All Together: Add the cooked chicken back into the skillet along with the drained pasta. Toss everything together, adding a splash of the reserved pasta water if the sauce needs to be loosened. Stir in the grated Parmesan cheese until melted and well combined.

            Season to Taste: Adjust the seasoning with salt and black pepper according to your preference.

              Serve: Plate the creamy pasta, garnishing with fresh basil leaves and additional red pepper flakes if desired.
