Spicy Chickpea Veggie Burgers

1 can (15 oz) chickpeas, drained and rinsed

1/2 cup rolled oats

1/2 cup breadcrumbs (whole wheat preferred)

1 small red onion, finely chopped

2 cloves garlic, minced

1 small red bell pepper, finely chopped

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 tablespoon soy sauce

1 tablespoon tahini (or any nut/seed butter)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro or parsley, chopped (for garnish)

Burger buns (4)

Lettuce, tomato slices, and avocado (for toppings)

Instructions
 

Prepare the Chickpeas: In a large mixing bowl, mash the drained chickpeas using a fork or a potato masher until mostly smooth but with some texture remaining.

    Mix the Ingredients: To the mashed chickpeas, add the rolled oats, breadcrumbs, chopped onion, minced garlic, and bell pepper. Then, stir in chili powder, cumin, smoked paprika, cayenne pepper, soy sauce, tahini, olive oil, salt, and pepper. Mix everything until well combined.

      Form the Patties: Divide the mixture into four equal parts and shape each part into a burger patty. If the mixture is too crumbly, add a splash of water until it holds together, or if too wet, add a bit more breadcrumbs.

        Chill the Patties: Place the shaped patties on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes. This helps them firm up for better grilling or frying.

          Cook the Patties: Heat a non-stick skillet or grill pan over medium heat with a bit of olive oil. Once hot, carefully add the patties, cooking for about 5-7 minutes on each side or until golden brown and crispy.

            Assemble the Burgers: Toast the burger buns if desired. Place a patty on the bottom half of each bun and layer with lettuce, tomato slices, and avocado. Sprinkle fresh cilantro or parsley for added flavor.
