Spicy Hatch Chili Sweet Potato Wraps

2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup hatch green chilies, roasted and chopped (canned or fresh)

1/2 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1/2 cup red onion, finely chopped

1/2 cup cilantro, chopped

Juice of 1 lime

4 large tortillas (whole wheat or corn)

1 cup queso fresco or feta cheese, crumbled (optional)

Avocado slices for garnish (optional)

Instructions
 

Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss diced sweet potatoes with olive oil, smoked paprika, cumin, cayenne pepper, salt, and pepper until well coated. Spread them in a single layer on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.

    Prepare the Filling: In a separate bowl, combine the roasted sweet potatoes, chopped hatch chilies, black beans, corn, red onion, cilantro, and lime juice. Mix gently until well combined.

      Assemble the Wraps: Lay out a tortilla on a flat surface. Place a generous scoop of the sweet potato filling in the center of the tortilla. If desired, sprinkle with crumbled queso fresco or feta cheese.

        Wrap It Up: Fold the sides of the tortilla towards the center, then roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.

          Warm the Wraps (optional): In a skillet over medium heat, lightly toast the wraps on each side for 2-3 minutes until golden and slightly crispy.
