Spicy Hatch Chili Turkey Wraps

1 lb ground turkey

2 medium Hatch green chilies, roasted, peeled, and diced

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

4 large whole wheat or spinach wraps

1 cup fresh spinach leaves

1 avocado, sliced

1 cup shredded pepper jack cheese

1/2 cup sour cream or Greek yogurt

Fresh cilantro for garnish (optional)

Prepare the Turkey Filling: In a large skillet, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.

    Cook the Turkey: Push the onions and garlic to the side and add the ground turkey to the pan. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Make sure there is no pink remaining.

      Add Spices and Chilies: Stir in the roasted Hatch chilies, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix well and cook for an additional 3-4 minutes to let the flavors meld together. Remove from heat and set aside.

        Assemble the Wraps: Lay the whole wheat or spinach wraps flat on a clean surface. Start with a layer of fresh spinach leaves in the center of each wrap. Spoon a generous amount of the spicy turkey mixture over the spinach.

          Layer on the Goodies: Top the turkey filling with sliced avocado and a sprinkle of shredded pepper jack cheese. Drizzle with sour cream or Greek yogurt and garnish with fresh cilantro, if desired.
