Ingredients

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup almond milk (or any plant-based milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spice level)

Salt and black pepper, to taste

1 cup BBQ sauce (your favorite brand or homemade)

3 tablespoons honey or agave syrup (for a vegan option)

1 tablespoon apple cider vinegar

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Optional: additional cayenne or chili flakes for extra heat

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the Cauliflower: In a large bowl, combine flour, almond milk, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Whisk until smooth and well combined.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it is completely coated. Allow excess batter to drip off, then arrange the florets in a single layer on the prepared baking sheet.

Bake the Cauliflower: Bake the coated cauliflower bites in the preheated oven for about 20-25 minutes, or until they are golden and crispy, flipping halfway through.

Prepare the Sauce: While the cauliflower is baking, prepare the spicy honey BBQ sauce. In a small saucepan over medium heat, combine BBQ sauce, honey (or agave), apple cider vinegar, and olive oil. Stir until heated through and well combined. Remove from heat and set aside.

Toss in Sauce: Once the cauliflower bites are done baking, remove them from the oven and transfer them to a large mixing bowl. Pour the spicy honey BBQ sauce over the hot cauliflower bites and toss gently until evenly coated.

Final Bake: Return the coated cauliflower bites to the baking sheet and bake for an additional 10 minutes, allowing the sauce to caramelize slightly.

Serve and Garnish: Remove from the oven and let cool for a minute. Garnish with freshly chopped parsley and additional cayenne or chili flakes if desired. Serve hot, with extra sauce on the side for dipping.
