Ingredients

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1/4 cup soy sauce

2 tablespoons sesame oil

2 tablespoons gochujang (Korean chili paste)

2 tablespoons honey

1 tablespoon rice vinegar

3 cloves garlic, minced

1 teaspoon ginger, freshly grated

1 tablespoon sesame seeds (for garnish)

2 green onions, finely chopped (for garnish)

Salt and pepper to taste

Cooked rice or lettuce leaves (for serving)

Instructions

Marinate the Chicken: In a large mixing bowl, combine soy sauce, sesame oil, gochujang, honey, rice vinegar, minced garlic, and grated ginger. Whisk until well blended. Add the chicken pieces to the marinade, tossing to coat. Cover and refrigerate for at least 30 minutes, preferably 2 hours for more flavor.

Preheat the Grill or Skillet: If using a grill, preheat it to medium-high heat. For a skillet, heat a non-stick pan over medium-high heat and lightly grease with cooking oil.

Cook the Chicken: Remove the marinated chicken from the refrigerator. If using a grill, thread the chicken pieces onto skewers. Grill the chicken for 5-7 minutes on each side, or until cooked through and slightly charred. If using a skillet, add the chicken pieces and sauté for about 6-8 minutes, until golden brown and cooked through. Avoid overcrowding the pan.

Prepare for Serving: Once cooked, remove the chicken from the grill or skillet. Let it rest for a few minutes, then sprinkle with sesame seeds and chopped green onions.

Serve: Serve the spicy Korean BBQ chicken bites hot on a platter, accompanied by cooked rice or wrapped in lettuce leaves for a fresh bite. You can also drizzle any leftover marinade over the serving.
