Spicy Mango Glazed Salmon Bites

1 lb salmon fillet, skin removed and cut into bite-sized cubes

1 ripe mango, peeled and diced

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon sriracha (adjust to taste for spice)

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon lime juice

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Marinade: In a blender, combine diced mango, honey, soy sauce, sriracha, minced garlic, grated ginger, and lime juice. Blend until smooth. Adjust sriracha to your preferred level of spiciness.

    Marinate the Salmon: Place salmon bites inside a shallow dish and pour half of the mango marinade over them. Sprinkle with salt and pepper, gently toss to coat, and let them marinate for 15-20 minutes.

      Cook the Salmon Bites: Heat olive oil in a large non-stick skillet over medium-high heat. Remove salmon bites from the marinade (discard the used marinade) and carefully add them to the pan in a single layer. Cook for 2-3 minutes on each side, or until salmon is cooked through and slightly crispy on the outside.

        Glaze with Remaining Marinade: Once the salmon bites are cooked, lower the heat and add the remaining mango marinade to the skillet. Allow it to simmer for 1-2 minutes, tossing the salmon bites gently in the glaze to coat them well.

          Serve: Transfer the glazed salmon bites to a serving platter. Garnish with fresh chopped cilantro and serve with lime wedges for an extra zesty kick.
