1 ½ lbs boneless, skinless chicken thighs (cut into bite-sized pieces)

1 ripe mango (peeled and diced)

2 habanero peppers (finely chopped, adjust to taste)

3 tablespoons honey

3 tablespoons olive oil

2 tablespoons soy sauce

2 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

1 tablespoon lime juice

1 teaspoon smoked paprika

Salt and pepper (to taste)

Instructions
 

Prepare the Marinade: In a large mixing bowl, combine the diced mango, finely chopped habanero peppers, honey, olive oil, soy sauce, minced garlic, grated ginger, lime juice, smoked paprika, salt, and pepper. Mix well until all ingredients are well incorporated.

    Marinate the Chicken: Add the chicken pieces to the marinade, ensuring all the pieces are well coated. Cover the bowl with plastic wrap or a lid, and let it marinate in the refrigerator for at least 1 hour (up to 4 hours for deeper flavor).

      Preheat the Grill: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

        Prepare the Skewers: Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is fully cooked (internal temperature of 165°F) and has nice grill marks.
