Ingredients

2 ripe mangoes, diced

1 medium red onion, finely chopped

2 jalapeños, seeded and minced (adjust spice level to taste)

1 red bell pepper, diced

1 cup fresh cilantro leaves, roughly chopped

Juice of 2 limes

1 teaspoon honey (optional, for added sweetness)

Salt, to taste

Black pepper, to taste

Instructions

Prep the Ingredients: Begin by dicing the ripe mangoes into small cubes. Finely chop the red onion and red bell pepper, and mince the jalapeños, ensuring to remove the seeds for a milder flavor if desired.

Combine Ingredients: In a large mixing bowl, combine the diced mangoes, chopped red onion, minced jalapeños, and diced red bell pepper. Gently mix them together to evenly distribute the ingredients.

Add Fresh Herbs: Add the chopped cilantro leaves into the bowl and gently fold them into the mixture, ensuring they are well mixed without bruising.

Season the Salsa: Squeeze the juice of the two limes over the mixture. If you prefer a bit more sweetness, drizzle in the optional honey. Season the salsa with salt and black pepper to taste.

Chill and Blend the Flavors: Cover the bowl with plastic wrap and refrigerate the salsa for at least 30 minutes. This will allow the flavors to meld beautifully.

Serve: Once chilled, give the salsa a gentle stir before serving. It’s perfect as a dip for tortilla chips, a topping for grilled chicken or fish, or even as a vibrant addition to tacos!
