1 lb ground pork (or ground turkey)

1/2 cup breadcrumbs (preferably panko for a lighter texture)

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 egg

1 tsp soy sauce

1 tsp ginger paste (or freshly grated ginger)

1/2 tsp salt

1/4 tsp black pepper

For the Spicy Pineapple Glaze:

1 cup fresh pineapple chunks (can use canned if fresh is unavailable)

1/2 cup brown sugar

1/4 cup soy sauce

1 tbsp sriracha (adjust to taste)

1 tbsp rice vinegar

1 tsp cornstarch mixed with 1 tbsp water (for thickening)

1 tsp sesame oil

1/2 tsp crushed red pepper flakes (optional for extra heat)

Fresh cilantro, chopped (for garnish)

Make the Meatballs: In a large bowl, combine the ground pork (or turkey), breadcrumbs, green onions, garlic, egg, soy sauce, ginger, salt, and black pepper. Mix until just combined, being careful not to overmix.

    Form the Meatballs: Preheat your oven to 400°F (200°C). Using your hands, scoop out a tablespoon of the meat mixture and roll it into a ball. Place the meatballs on a baking sheet lined with parchment paper, spacing them about 1 inch apart.

      Bake the Meatballs: Bake in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown on the outside.

        Prepare the Glaze: While the meatballs are baking, prepare the spicy pineapple glaze. In a medium saucepan over medium heat, combine the pineapple chunks, brown sugar, soy sauce, sriracha, rice vinegar, and sesame oil. Bring to a simmer.
