2 cups canned chickpeas (or 1 cup dried chickpeas, soaked and cooked)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon sea salt

1 tablespoon lemon juice

Freshly ground black pepper (to taste)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: If you’re using canned chickpeas, rinse and drain them thoroughly. If you opted for dried chickpeas, soak them overnight, cook until tender, and drain.

      Dry the Chickpeas: Pat the chickpeas dry with a kitchen towel. Removing excess water will help them crisp up better in the oven!

        Season the Chickpeas: In a mixing bowl, combine the chickpeas with olive oil, smoked paprika, cumin, cayenne pepper, garlic powder, onion powder, sea salt, lemon juice, and black pepper. Toss everything together until the chickpeas are evenly coated with the spices.

          Spread and Roast: Line a baking sheet with parchment paper or a silicone mat. Spread the seasoned chickpeas in a single layer on the sheet to ensure even roasting.

            Roasting Time: Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Every 10 minutes, give the chickpeas a good shake to promote even crisping. Keep an eye on them to ensure they don’t burn.

              Cool and Serve: Once the chickpeas are golden brown and crispy, remove them from the oven. Allow them to cool for a few minutes before enjoying them as a snack. They will continue to harden as they cool.

                Storage: Store any leftovers in an airtight container at room temperature for up to a week (if they last that long!).
