2 cans of tuna, drained (5 oz each)

1/2 cup mayonnaise

2 tablespoons Sriracha sauce (adjust to taste)

1 tablespoon Dijon mustard

1 cup shredded sharp cheddar cheese

1/2 cup diced red onion

1/4 cup chopped fresh cilantro (optional)

4 large flour tortillas

4 tablespoons butter (for grilling)

Salt and pepper to taste

1 avocado, sliced (for serving)

Lime wedges (for serving)

Instructions
 

Prepare the Tuna Mixture:

    In a medium bowl, combine the drained tuna, mayonnaise, Sriracha, Dijon mustard, diced red onion, and chopped cilantro. Mix well to evenly distribute all ingredients. Add salt and pepper to taste.

      Assemble the Quesadillas:

        Lay out two tortillas on a flat surface. Evenly spread half of the tuna mixture over each tortilla (leaving a small edge). Sprinkle half of the shredded cheddar cheese over the tuna. Place the remaining tortillas on top to form two full quesadillas.

          Heat the Griddle:

            In a large skillet, melt 2 tablespoons of butter over medium heat. Once melted and bubbling, gently place the first quesadilla in the skillet. Cook for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt.

              Flip and Finish:

                Carefully flip the quesadilla using a spatula. Add the remaining 2 tablespoons of butter to the skillet if needed, and cook for another 3-4 minutes on this side until golden brown and crispy. Repeat the process with the second quesadilla.

                  Slice and Serve:
