Spicy Thai Peanut Chicken Lettuce Boats

1 lb ground chicken

1 tablespoon olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, finely diced

1 cup carrots, shredded

1/2 cup green onions, chopped

1/3 cup peanuts, chopped (plus extra for garnish)

Salt and pepper, to taste

8 large lettuce leaves (butter lettuce or romaine work well)

For the Spicy Thai Peanut Sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 tablespoon sriracha (adjust to spice preference)

1 tablespoon rice vinegar

1 tablespoon lime juice

1 tablespoon water (to thin, as needed)

Instructions
 

Prepare the Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, honey, sriracha, rice vinegar, lime juice, and water until smooth. Adjust consistency with additional water if too thick. Set aside.

    Cook the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.

      Add Chicken and Veggies: Increase the heat to medium-high and add the ground chicken to the skillet. Cook for about 5-6 minutes, breaking it apart with a spatula until fully cooked and no longer pink. Then, incorporate the diced bell pepper, shredded carrots, and chopped green onions, stirring for an additional 3-4 minutes until veggies are tender.

        Season the Mixture: Stir in salt and pepper to taste and half of the chopped peanuts. Remove from heat.

          Assemble the Lettuce Boats: Carefully wash and dry the lettuce leaves. Spoon the warm chicken mixture into each leaf, generously drizzling the spicy peanut sauce over the top.
