Spinach Mushroom Pasta

8 oz (225g) pasta (fettuccine or penne works well)

2 cups fresh spinach, washed and roughly chopped

1 cup mushrooms, sliced (cremini or button)

3 cloves garlic, minced

1 small onion, finely chopped

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta. Set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, and cook for another 5-7 minutes until the mushrooms are soft and browned.

      Add Spinach: Stir in the chopped spinach and cook until wilted, about 2 minutes. If you prefer a more robust flavor, add the dried oregano and red pepper flakes at this stage.

        Create the Sauce: Pour in the heavy cream, mixing well with the sautéed vegetables. Let it simmer for 2-3 minutes until the sauce thickens slightly. Reduce the heat and stir in the grated Parmesan cheese until melted and incorporated.

          Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing gently to coat the pasta evenly with the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.

            Season: Taste and season with salt and pepper as necessary.
