2 lbs russet potatoes

1 cup sour cream

1 cup freshly grated sharp cheddar cheese

1/2 cup finely chopped green onions (plus extra for garnish)

1/2 cup crumbled bacon

1/4 cup mayonnaise

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and black pepper to taste

Extra cheese for topping (optional)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Potatoes: Scrub the russet potatoes under cold water and dry them. Pierce each potato several times with a fork. Bake the potatoes directly on the oven rack for about 1 hour or until tender. Alternatively, you can microwave the potatoes until softened—this usually takes about 10-15 minutes.

      Cool and Peel: Once baked, allow the potatoes to cool for a few minutes until you can handle them. Peel the skin off (optional if you prefer the skin) and cut the potatoes into small cubes or chunks.

        Mix Ingredients: In a large bowl, combine the sour cream, mayonnaise, 1 cup of cheddar cheese, half of the chopped green onions, crumbled bacon, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

          Combine with Potatoes: Gently fold the cubed potatoes into the mixture until they are well-coated. Be careful not to mash the potatoes; you want some texture.

            Transfer to Baking Dish: Grease a 9x13 inch baking dish with butter or cooking spray. Pour the potato mixture into the dish and spread it out evenly. If desired, sprinkle extra cheese on top for a cheesy finish.
